Like many other aspects of Argentinian culture, its cuisine has been heavily influenced by European immigration. Mix Spanish and Italian flavors with Argentina's top quality (and affordable!) beef and dairy products, and you have a combination worth jumping on that long-haul flight for. It’s important to keep in mind that dinner is eaten late in Argentina. Most restaurants close in the afternoon and do not reopen until 8 pm, though locals typically don't actually begin dinner until 9 or 10 pm.

Here are some must-try dishes and drinks in Argentina:

With Spanish origins, asado describes succulent barbequed meat, slow-cooked on a metal frame over an open fire or a bed of hardwood charcoal. In Argentina, asado is equal parts a dish and a social gathering – both of which you'll want to experience.

2. Provoleta

Soft provolone cheese is grilled in a skillet and topped with oregano, chili flakes or other herbs. A typical asado starter, provoleta is crisp on the outside, warm and gooey on the inside and delicious all around.

3. Chimichurri

A piquant combination of diced garlic, chopped parsley and oregano, olive oil and vinegar, this classic Argentinean condiment is the quintessential accompaniment to grilled meat.

4. Malbec wine

Argentina has one of the world’s most renowned wine regions. Malbecs from the wineries of Mendoza are famous around the world (and happen to pair well with steak), though other provinces also produce quality wines, including Torrontes from Cafayate and Syrahs from San Juan. 

5. Alfajores

Argentina’s favorite sweet biscuit. Take two round shortbreads, fill them with dulce de leche (a decadent caramel made from condensed milk) coat them in chocolate... et voila.

Argentineans take ice cream seriously. Don't miss helado de dulce de leche, the national flavor of Argentina.

7. Dulce de leche

Condensed milk is slowly reduced and sweetened to create a thick, sticky caramel. Find it in alfajores (a crumbly biscuit sandwich filled with dulce de leche), dessert empanadas, drizzled on ice cream or just eat it by the spoonful!

8. Yerba maté

This is Argentina's national drink. A caffeine-rich concoction of chopped and dried yerba maté is prepared in a gourd (maté) and drunk through a silver straw (bombilla). It's rich in antioxidants and polyphenols and has long been used by Indigenous people in South America.

Culture and customs

Argentinian culture and customs are influenced by the waves of European immigration that landed here in the 1880s and during the two World Wars. As a result of immigration, parts of the country feel notably more ‘European’ than other areas of South America.

Argentinians are famously affectionate, loud, passionate about football, and big fans of a good plate of homemade spaghetti. They have strong ties with family and friends, and the major religion is Catholicism.  

As a general guide, these are some key things you should know about Argentina:

1. A kiss on the cheek is the most common way of greeting someone

Particularly a friend, but it’s not uncommon between strangers, especially if being introduced by a mutual friend. This is true whether it’s female on female, female on male or male on male.

2. If you befriend someone, expect hugs

Expect a farewell hug and a greeting hug thereafter. Again, this is true whether it’s female on female, female on male or male on male.

3. Expect to be late

Being late for social or cultural events is almost fashionable in Argentina, but it can be an annoyance for travelers.

4. Siesta time is still common

Siestas are particularly popular in provinces such as Mendoza, San Juan, Salta. Shops may close from 1pm to 4pm and reopen until around 8-9pm.

5. Dinner is late

Dinner with locals can be very late. Having dinner at 9pm, 10pm and 11pm is perfectly normal and accepted in Argentina, but can cause a few rumbling tummies with travelers. The best thing to do is keep some snacks with you and try and fall into the local pattern.

6. Nightlife is well and truly nightlife

Pubs, clubs and events don’t kick off until 1-2am
no kidding!

7. The majority of Argentinians are Catholic

Between 70-80% of the population are Catholic, and you should be respectful when visiting churches, cathedrals and religious events. The dress code at religious sites is quite relaxed and no one will get in trouble for attending mass in t-shirts, shorts and thongs. However, closed shoes and trousers are preferred. Swimwear is a big no-no and it can be very offensive to the locals.

8. Avoid talking about the Falkland Islands War

Talking about the Falkland Islands war still evokes raw emotions amongst Argentinians and it's well-advised not to raise the topic with people you don’t know.

Be charmed by the grand building, old waiters and genuine tango classes that this Buenos Aires institution has been producing for more than 100 years. It might be a bit rough around the edges, but authenticity is guaranteed in this historic gem.

2. Barrancas de Belgrano

On the weekends, head to this leafy park at dusk to see unpretentious locals tango as the sun sets. Try out your tango steps, mix and mingle with Argentines and tourists, and enjoy the casual, fun vibe that proliferates under the park's gazebo.

3. Plaza Dorrego

This relaxed San Telmo favorite is a top spot for alfresco people-watching, tango viewing, wine drinking and socializing.

4. La Catedral

For a slice of old Argentina, head to this bewitching warehouse of kitsch where you can learn the art of tango with locals amid walls of old posters and a giant glowing, red heart. Lessons are taught in Spanish, and while the dancers here may not be technically great, their passion and love of tango are unquestionable.

5. Caminito

Purists may dismiss La Boca's showy street performers as 'tacky tangoists', but the colorful streets, flamboyant moves and suave outfits do have a bit of flair and provide quintessential Buenos Aires photo ops.

Many stores in Argentina allow travelers to shop tax-free. Look for a blue and white ‘Tax Free’ sign in store windows and make sure to ask for a Global Blue refund form when making your purchase. Get this form validated by a customs official at the airport when you're leaving the country (they’ll want to see the item and receipt as well), then take it to the Global Blue refund office to get your money back.

It’s a bit of a lengthy process, but it might be worth the effort depending on how much shopping you do.

Keep in mind that siesta is still common in some parts of Argentina. Many stores will close for a few hours in the afternoon and reopening times can be unpredictable.

1. Leather goods

Leather goods are normally top of the shopping list for every traveler – and rightly so! The quality of leather products is excellent and prices can be significantly cheaper than at home. The most popular items are jackets, handbags, shoes, boots and belts. A word of warning though – be wary of cheap imitations!

2. Mate cup set

A popular tourist shop item, cups may be sold on their own with a straw, or as a set with loose-leaf mate as well. Quality and design can vary, so it pays to shop around.

Argentinians are a lively bunch and like to party. Below are four of the biggest festivals of the year.

1. Buenos Aires Tango Festival - August

Passion oozes from Buenos Aires’ streets as tango fills the city each August. Open-air milongas (dances), film screenings, dance classes and competitions featuring world-class dancers are all part of this sizzling two-week event.

2. Fiesta de la Vendimia (Grape Harvest Festival) - March

This week-long celebration kicks off Mendoza’s grape-picking season, and it's a barrel of fun! The festival features parades, folkloric events and a grand coronation, as hopefuls vie to be chosen as the new Harvest Queen.

3. Carnaval (or Carnival) - February/March

Huge crowds turn up ready to have a good time for carnival celebrations in cities across Argentina. Like in Brazil, parades are a cacophony of colors, featuring feathered and sequined costumes and elaborate floats. Taking place right before Ash Wednesday, the best parties are in Gualeguay-chu and Corrientes.

4. Dia de la Tradicion (Day of Tradition) - November

Argentina’s beret-clad, nomadic cowboys, otherwise known as gauchos, are something of a national symbol. Each year on November 10th, they are celebrated with horsemanship shows, folk music, dancing, tons of barbequed meat and a big gaucho parade in San Antonio de Areco, the symbolic center of gaucho culture.

Spanning over 2485 miles from its subtropical north to its subpolar south, the climate in Argentina is as diverse as its landscapes. Summer (December to February) is the best time to visit Patagonia as the weather is mild and hiking trails are accessible.

In contrast, Buenos Aires can be very hot, humid and busy in summer, so the fall (March to May) and spring (September to November) may be better if you don't enjoy the heat or want to ditch the crowds.

The fall is also a stunning time of year in Patagonia and Mendoza when golden colors dominate the landscape.

Iguazu Falls is spectacular all year, but it's a sight to behold in the wet season from December to March when monsoon rains create even more powerful cascades.

If you want to do an  Antarctica cruise  from Ushuaia, the world's southernmost city, the season runs from November to March when temperatures rise and sea ice melts enough to enable access for cruise ships.

Mountains to Cloud Forest trekking

This is one of our most challenging north west Argentina hiking trips, recommended only for experienced trekkers: covering 58km over four days, we climb to an altitude of 4,200m, gradually descending to 1,325m, following the contours of mountain tracks along the way.

This hike offers a complete change in eco-system during four days: starting in the mountains which enfold the Quebrada de Humahuaca, we descend into the Yungas Cloud Forest of the east, following the trail of indigenous traders who travelled between the salt flats and the sub-tropical jungle.

Culture & Tradition

Your trip with Poncho Tours will give you an insight into Argentina's culture and tradition. Argentina is an ostensibly Catholic country but, particularly in the rural areas, Christianity is mixed with pre-hispanic beliefs in Mother Earth, Pachamama. When you visit Argentina, you will come across roadside shrines to more contemporary folk saints like Gauchito Gil and the Difunta Correa. In the North West, the coca leaf is also bound up with ancient traditions: it's still chewed daily by the locals and is ideal for combating altitude sickness. Though some may quibble about its listing under culture, football is the glue that binds the nation, and it provides a great ice-breaker for foreign visitors. It was immigrant railway workers who staged the first ever football match in Argentina in 1867, and the Scotsman Alexander Hutton who founded the AsociaciĂłn del FĂștbol Argentino 26 years later. The Brits, of course, also brought rugby and polo (as well as cricket, which, mysteriously, never quite caught on). Food & Drink

Argentina is a food lover's paradise. Taste the grilled Argentinian beef slathered in fresh chimichurri sauce. Savour the empanadas filled with meat, chicken, or cheese (think of a small meat pie). There are cornmeal tamales with meat, and humitas, parcels of sweetcorn and cheese wrapped in a maize leaf. In the border province of Jujuy, llama is a speciality, served with quinoa or Andean potatoes , of which there are hundreds of varieties of all shapes, sizes, and colours.

Argentina Vacation

The first thing to remember when you visit Argentina is that you'll never have enough time to see it all. The amazing food, world-class wine, friendly people, and stunning landscape will call for you to visit again next year. Planning to take tours to Argentina every year gives you time to properly explore UNESCO world heritage sites like the Quebrada de Humahuaca, as well as the wine region of the Valles Calchaquies, the Cloud Forest of Calilegua and the huge open spaces of the Andean mountain plateau in the north west of Argentina, where Poncho Tours is based.

The best time to visit Argentina is during the shoulder season. The lovely spring months of September to November and the fall months of March to May. That is when travellers will find good weather and fewer crowds in Argentina's busy capital city, Buenos Aires, through which every visitor must pass through and spend a few days. 

In the north west, rainy season is January and February, and the winter holidays are in July.

Frequently asked questions

When is the best time to visit salta.

North West Argentina is really an all-year round destination, but remember seasons are opposite from the northern hemisphere. It’s coldest in July and August (winter), and hottest from November to March (Spring into Summer).

When is rainy season?

Rainy season in northwest Argentina is January and February, but there can also be storms in December and March. We use 4x4 vehicles, but the weather can be unpredictable so we have to be flexible, and in extreme circumstances may be forced to make changes to the itinerary. Storms tend to come late afternoon or overnight, and are very dramatic but over pretty quickly, so hopefully it shouldn’t affect your holiday too much.

Can we modify existing itineraries?

Yes, of course: all the trips outlined on our webpage are designed to whet your appetite and show what’s achievable in a certain time-frame. But as we are tailor-made specialists, what we like to do is design the perfect holiday to suit you. So get in touch and we’ll start the conversation!

Will I suffer from altitude sickness?

It’s unlikely. Salta is 1,200m (3,937ft) above sea level, so you don’t even notice the altitude: but going north and south we soon rise to 2,500m (8,200ft): and west into the mountain plateau we can reach altitudes over 3,000m (9,840ft). The key is acclimatisation, so most of our trips are designed to rise gradually: and to follow our advice en route: avoid heavy food and alcohol, drink lots of water, and chew coca leaves or drink coca tea (we’ll provide both).

Can I cancel my trip if I can’t travel?

For cancellation 14 days or fewer before departure on the trip with Poncho Tours, we reserve the right to retain 100% of the deposit paid. For cancellations between 15 and 30 days before departure, it’s 50%, and between 31 and 60 days in advance, it’s 25%. If you cancel more than 61 days in advance, the deposit is fully refundable. What if I have to cancel because of Covid-19 travel restrictions?

If you’re unable to complete your holiday due to Covid-19 restrictions, we will keep your deposit for a future trip or, in extreme circumstances, we may agree to return it.

What’s Argentina’s post-Covid entry policy?

To enter Argentina, you just need evidence of complete vaccination, and travel insurance which covers Covid, and you need to fill in a form online confirming you have no symptoms. This is a useful interactive map .

Do I need a Visa to get into Argentina?

Only in rare cases: from most countries you will simply get an entry stamp in your passport on arrival which allows you to stay here for three months.

What about flight connections to Salta?

The national airline Aerolineas Argentinas offers the most flights from Buenos Aires to Salta, in addition to thrice weekly connections from Salta to Iguazu, Mendoza, Cordoba and Rosario. Apart from Aerolineas Argentinas, JetSmart and FlyBondi also operate daily flights between BA and Salta. Jetsmart also has three connections a week to Neuquen in northern Patagonia and twice weekly Iguazu.   • Argentinian cuisine is very meat heavy, and rare meatless dishes are often covered in cheese. If you're a vegetarian or a vegan, be sure to do your research beforehand to find a restaurant that caters to you.
  • When on a holiday in Argentina, do as the locals do. Slow down and find a new appreciation for time. Relax, enjoy your meals, and (if you can avoid it) try not to rush.
  • The idea of personal space doesn't always apply in Argentina. Expect locals to stand close to you when chatting. They may also reach out and touch you. Try to remember this is their sociable culture and is not intended to make you feel uncomfortable.
  • Counterfeit money is very common in Argentina. Always double check your notes. Look for the bill's clear hologram by holding it up to the natural light, and run your fingers over the pictured diplomat's suit to ensure it is textured.
  • Around Christmas time, the city of Buenos Aires shuts down almost completely as locals head to the coast. Shops and restaurants (even fast food chains) will likely be closed, so plan ahead if visiting at this time. Consider visiting when the weather is best during Argentinian fall (March to May) or spring (September to November).

  • Borello Travel & Tours, 7 Park Ave., Ste. 21, New York, NY 10016 (tel. 800/405-3072 or 212/695-3200; www.borellotravel.com), is a New York-based travel firm specializing in upscale travel to South America. The owner, Sandra Borello, has run her company for nearly 20 years and is a native of Buenos Aires. Prices can vary, depending on the season, options, and hotel, but a 1-week package to Buenos Aires can cost about $3,000 per person. They maintain an additional office in Buenos Aires, which can be reached at tel. 11/5031-1988.
  • Travel Dynamics International, 132 E. 70th St., New York, NY 10021 (tel. 800/257-5767 or 212/517-0076; www.traveldynamicsinternational.com), is a luxury cruise operator that specializes in educational enrichment programs aboard small cruise ships. TDI voyages include expert guided land tours and onboard lectures by distinguished scholars and guests. They cater to the traveler with an intellectual interest in history, culture, and nature. Operating for almost 40 years, this company offers voyages with destinations in South America and Antarctica. Their journeys to Antarctica usually open with an overnight stay in Buenos Aires, and begin at $8,995 for a 14-day program (prices may vary).

Recommended Buenos Aires-Based Operators -- Even if you have arranged things at home, once you're in Buenos Aires, there are always last-minute changes or new things you would like to see. The following companies are all excellent and have English-speaking staff members. All can also provide trips to other cities in Argentina outside of Buenos Aires, as well as South America.

  • Say Hueque Tourism, Viamonte 749, Office 601, 1053 Buenos Aires (tel. 11/5199-2517; www.sayhueque.com), is a highly recommended small company with knowledgeable, friendly service and attention to personalized client care. The company began by catering to the young and adventurous on a budget, but has begun to deal with a more upscale yet independent-thinking clientele. Various tour themes include Literary Buenos Aires, Biking Buenos Aires, and Tango Buenos Aires, among many others. They also offer adventure tours within the vicinity of Buenos Aires such as to the Tigre Delta. Outside of Buenos Aires, they specialize in Patagonia and IguazĂș, finding special out-of-the-way places for their clients. Based on their very personal service, this is among my favorite of the operators within Buenos Aires.
  • Euro Tur, Viamonte 486, 1053 Buenos Aires (tel. 11/4312-6077; www.eurotur.com), is one of the largest and oldest travel companies in Argentina, specializing in inbound travel, but they can also help walk-ins to accommodate travelers' needs directly while in Buenos Aires. They can arrange basic city tours to trips of all kinds throughout Argentina and South America.
  • Les Amis, MaipĂș 1270, 1005 Buenos Aires (tel. 11/4314-0500; www.lesamis.com.ar), is another large Argentine tour company, with offices throughout Buenos Aires and Argentina. They can arrange trips for Buenos Aires, Argentina, and many other parts of South America. Within the U.S., they are represented by Gina Heilpern, who maintains an office in New York. She can be reached at tel. 718/857-5567.

Organized Adventure Trips -- The advantages of traveling with an organized group are plentiful, especially for travelers who have limited time and resources. Tour operators take the headache out of planning a trip, and they iron out the wrinkles that invariably pop up along the way. Many tours are organized to include guides, transportation, accommodations, meals, and gear (some outfits will even carry gear for you, for example, on trekking adventures).

  • Abercrombie & Kent, 1520 Kensington Rd., Oak Brook, IL 60521 (tel. 800/323-7308; www.abercrombiekent.com), is a luxury tour operator that offers "Patagonia: A Luxury Adventure," a 16-day trip that heads from Buenos Aires to Ushuaia for a 3-day cruise around Tierra del Fuego, followed by visits to Torres del Paine park, Puerto Varas, and Bariloche. Cost is $12,695 per person, double occupancy.
  • Mountain-Travel Sobek, 6420 Fairmount Ave., El Cerrito, CA 94530 (tel. 888/MTSOBEK [6876235] or 510/527-8100; fax 510/525-7718; www.mtsobek.com), are the pioneers of organized adventure travel, and they offer trips that involve a lot of physical activity. One of their more gung-ho journeys traverses part of the Patagonian Ice Cap in Fitzroy National Park for 21 days; a more moderate "Patagonia Explorer" mixes hiking with cruising. Prices start at $6,495 per person. Sobek always comes recommended for their excellent guides.
  • Backroads Active Vacations, 801 Cedar St., Berkeley, CA 94710-1800 (tel. 800/GO-ACTIVE [462-2848] or 510/527-1555; www.backroads.com), offers a 8-day biking tour through Northwest Argentina, with stops in Cachi and Cafayate, staying in luxury accommodations such as Estancia ColomĂ©. Costs run from $4,498.
  • Wilderness Travel, 1102 Ninth St., Berkeley, CA 94710 (tel. 800/368-2794 or 510/558-2488; www.wildernesstravel.com), offers a more mellow sightseeing/day-hiking tour around Patagonia, including Los Glaciares, Ushuaia, El Calafate, and Perito Moreno Glacier. Prices start at $4,295, depending on the number of guests (maximum 15).
  • Wildland Adventures, 3516 NE 155th St., Seattle, WA 98155 (tel. 800/345-4453 or 206/365-0686; www.wildland.com), offers a few adventure tours of Argentina. The "Salta Trek Through Silent Valleys" tour takes in Salta, Jujuy, and the Andean plain. Two Patagonia tours are offered: "Best of Patagonia," which concentrates on Argentine Patagonia (including PenĂ­nsula ValdĂ©s, RĂ­o Gallegos, Perito Moreno, and Ushuaia), and "Los Glaciares Adventure," which visits El Calafate, Fitzroy National Park, and Perito Moreno Glacier, among others. Accommodations range from hotels to camping to rustic park lodges. Eco-tourism is an integral part of Wildland tours. Prices start at $2,500 for the 8-day Salta tour and continue upwards of $4,125 for the 10-day Patagonia trip.

Private Tour Guides -- It's easy to hire guides through your hotel or any travel agency in Buenos Aires. You may also want to contact AGUITBA (AsociaciĂłn de GuĂ­as de Turismo de Buenos Aires), Carlos Pellegrini 833, Sixth Floor C, Buenos Aires (tel. 11/4322-2557; www.aguitba.org.ar), a professional society of tour guides that has tried to promote licensing and other credentials legislation to ensure the quality of guides. Its offices are open Monday to Friday from 1 to 6pm.

Private guides I recommend include Buenos Aires-based Marta Pasquali (tel. 11/15-4421-2486 [cell]; [email protected]) and Monica Varela (tel. 11/15-4407-0268 [cell]; [email protected]). Both have conducted tours for several years in Buenos Aires. They offer high-quality specialized tours on various themes, and often work with corporations. I highly recommend them for their specialized knowledge of the city, which goes far beyond what many other tour guides know.
